Roast Pork cracking with wild garlic chimichurri

Simple INGREDIENTS for 4 servings of Roast pork

  • 500 g of Pork shoulder with skin
  • 1/2 tsp of salt
  • 1/2 tsp of black paper
  • 2 cup of water

Easy Method

  1. Score the pork skin with a sharp knife
  2. Rub salt & pepper into the skin by hand.
  3. Place the prepared pork on the roasting tray with the water.
  4. Roast in the preheated oven at 250C’ for 45min, reducing down at 200C’ for 15min, and 140C’ for 60 min.
  5. By adding half cup of red wine to degrease and one cup of stock on the roasted juice on the tray and reducing down will make delicious gravy too if you like.

[Simple INGREDIENTS for a jar of chimichurri ]

  • 50g of Wild garlic leaves
  • 1 red chilli
  • 1/2 of sea salt
  • 1/2 tsp of black paper
  • 80 ml of olive oil
  • 2 Tbsp of Lemon Juice

[Easy Method]

  1. Chop the wild garlic and chilli finely.
  2. Mix all the ingredients together.
